I made one of my most classic recipes last night for dinner. It's bursting with flavor and so, SO easy! It's my Roasted Vegetable Quinoa Bowl. I tend to prepare everything at once and then I usually end up eating it the next day just because it smells so amazing I usually end up munching while I'm finishing it up.
First things first -- gather all of the necessary ingredients! Now, when you're making this at home definitely feel free to use whatever vegetables you have on hand or just use your favorites. The vegetables I used this time were brussels sprouts, sweet potato, carrots, kale, and cauliflower.
